Why do we say restez and utilisez

I know I've covered this at sometime but can't remember why we add ez on words that don't have vous in front of it.  Please remind me.

In this context, restez and utilisez are in present imperative form in 2nd person, formal or plural. 

As in English, in French neither the subject pronoun nor a stress pronoun is included in a standard imperative, direction or ‘polite’ command.
