You could say

Je vous souhaite une bonne journée !

but not

Je vous souhaite une belle journée !

as it would indicate that you were talking about the weather.

Bonne Journée à vous!

You can but it's very long for nothing and it makes it kinda weird... Just say : Bonne journée.
