Are 'ou non' and 'ou pas' interchangeable? If not, how do I know when to use each one? Examples I have come across in my studies: "Que tu l'admettes ou non, ce ne sont pas tes amis." and "C'est comme ça qu'elle veuille l'accepter ou pas.

For the question "Je suis resté cinq jours à Mykonos, mais ________ à Paris", I was marked incorrect for answering "je ne suis que resté trois jours". The accepted answer was "je ne suis resté que trois jours". How does placing "que" before or after "resté" change the emphasis or meaning of this statement? "But I stayed only three days in Paris" vs "But I only stayed three days in Paris". I cannot see the distinction that makes one form wrong and the other right.
Why is reposer used in the final sentence as a translation of leaving the tart to set? Doesn't reposer just imply leave it to rest (in the fridge) with no mention of setting?,

Ancien is one of those adjectives that changes meaning whether before or after the noun - former when before and ancient when after. However I came across the sentence in a French magazine - "l'un des plus anciens sites du pays", which obviously means one of the most ancient sites in the country. Presumably the inclusion of the 'plus' shifts the 'anciens' to in front of the noun and it retains its meaning of ancient. So "l'un des sites plus anciens du pays" would be wrong ?
In level C1 why is there so much emphasis on passé simple? I would rather be practising useful phrases. Thank you.
